Hugo Roellinger voted Chef of the Year by his peers

This trophy is awarded following a vote by gastronomy professionals cited in the Michelin guide, at the request of Le Chef magazine, to recognize "their most inspiring peers of the year 2025".

Hugo Roellinger, 37, succeeds his father, Olivier Roellinger, a monument of French gastronomy, who was crowned twenty years earlier. "A first in the history of the awards," says Le Chef.

After sailing the seas as a merchant navy officer, the Breton started cooking at the age of 24.

Trained by great chefs such as Michel Bras, Michel Troisgros, Pierre Gagnaire and Michel Guérard, in 2014 he took over the management of the restaurant Le Coquillage, in Saint-Méloir-des-Ondes, near Cancale (Ille-et-Vilaine), founded by his father and already Michelin-starred.

His seafood and plant-based cuisine earned him a second star in 2019, before being named "chef of the year 2022" by the Gault et Millau guide, then winning the Michelin supreme award in 2025.

Pascal Hainigue, from the two-star Auberge de l'Ill, in Illhaeusern, Haut-Rhin, was named pastry chef of the year.

Sommelier Steve Gellot, who works at the two-star restaurant Anne de Bretagne in La Plaine-sur-Mer (Loire-Atlantique), was also awarded, while the Service Prize was awarded to Coline Humbert for her work at the two-star Restaurant Jean Sulpice in Talloires-Montmin in Haute-Savoie.
