Today, Caffè Florian specializes in creatively reinterpreting traditional recipes. Classics like Bolognese aren't served in their original form, but are reimagined as quiches. Another highlight is the innovative version of cannelloni, which uses thin slices of eggplant filled with Casatella cheese, mozzarella, and fresh pesto instead of the usual pasta.

In addition to classic Italian coffee specialties – from strong espresso to creamy cappuccino – the café also offers a variety of fine teas, cakes and gelatos, allowing guests a sweet journey into the history of Venetian baking and ice cream.
