Italy: The oldest café in the world can be found in Venice

Today, Caffè Florian specializes in creatively reinterpreting traditional recipes. Classics like Bolognese aren't served in their original form, but are reimagined as quiches. Another highlight is the innovative version of cannelloni, which uses thin slices of eggplant filled with Casatella cheese, mozzarella, and fresh pesto instead of the usual pasta.
