Corn ribs are – as the name suggests – made from corn. But if you think of pork or beef when you hear "ribs," you're completely wrong. These ribs are actually vegetarian, and that's not the only reason they're so popular. Corn ribs are delicious for people who don't eat meat, but they also make a fantastic side dish – and they're delicious any time of year.

  • two organic corn cobs
  • four tablespoons of olive oil
  • a teaspoon of garlic powder
  • half a teaspoon of smoked paprika powder
  • half a teaspoon of sweet paprika powder
  • a quarter teaspoon of salt
  • a quarter teaspoon of black pepper
  • one-eighth teaspoon of chili powder (more or less as needed)
  • grated Parmesan, parsley and butter to taste

And here's how it works:

1. First, wash the corn cobs and boil them in a pot with plenty of water for about 15 minutes. By the way: Some supermarkets also sell pre-washed organic corn cobs. If you already have boiled corn cobs, simply skip the first step.

2. Now it's time to cut. This step should be performed with concentration and caution, as the risk of cutting yourself is high. First, remove the stalk with a sharp knife so that the corn cob can be placed upright. Then, carefully cut the two corn cobs in half from top to bottom. To quarter the corn halves, place them on a board with the cut edge facing down to make cutting easier.

3. Now make the marinade from the olive oil, garlic powder, smoked paprika, sweet paprika, salt, black pepper, and chili powder. Blend all of the above ingredients until a thick sauce forms.

4. Now line a baking sheet with parchment paper and place the corn quarters on it, leaving some space between them. Then, generously brush the marinade onto all sides of the corn and let it rest until the oven is preheated to 180 degrees Celsius (350 degrees Fahrenheit).

5. Next, bake the coated corn ribs in the oven for a total of 30 minutes, turning them halfway through. If you prefer, you can also cook the corn ribs in the air fryer for about 12 minutes.

When the corn ribs are ready, they'll have curled up—similar to spare ribs—and are ready to eat. If you like, melt a knob of butter over the hot corn ribs, garnish with parsley, and sprinkle with freshly grated Parmesan cheese. Also delicious: enjoy the ribs with BBQ sauce or ketchup. Enjoy!
