Janet Grant of Northampton says she cut this mezze salad recipe out of a River Valley Coop insert a couple of years ago. The dish, she says, has “traditional Middle Eastern flavors of mint, apricot, parsley, pine nuts, tahini, eggplant, and zucchini.” She also notes that “many of the ingredients are from our farm share,” making it the “perfect summer meal.”
