Honey Extraction. A Week as Sweet as Honey is the title of the event promoted by the Brusi and Le Brusine beekeeping farms of Cervia, with the patronage of the Municipality and the Cervia Centro Consortium. The 39th edition will run until Wednesday, August 27th, featuring a wealth of events. At the heart of the event is honey and its culture.
The initiative, which focuses on honey extraction, features a week of events that will bring a sweet touch to Cervia's historic center: beekeepers, producers, herbalists, expert tasters, chefs, and gourmets will take turns presenting. The best honeys of 2025 will also be presented during the evenings.
Today, starting at 6:00 PM, the honey, herb, and natural products market will be held in Piazzale Ascione (Viale Roma). At 9:30 PM, the Frate di Monte Cucco will open the Honey Auction, a charity initiative for Linea Rosa to support women victims of violence—in collaboration with the Casa delle Farfalle—concluding with Honey Extraction at 10:30 PM. Tomorrow, at 6:00 PM, at the Casa delle Aie, the program continues with a discussion about bees and honey and a honey tasting. Honey Extraction will continue at 10:30 PM. Next Friday, at 9:30 PM, a children's evening will be hosted by the Bubusettete bookshop in Piazzetta Pisacane. On Saturday, starting at 6:30 PM, the usual market will take place in Viale Roma, followed by a honey extraction demonstration and honey-based food tasting by the chefs of the Pellegrino Artusi association. On Wednesday, August 27, the event concludes with the market at 6 p.m. in Piazza Gemelli and the honey extraction at 9 p.m.
"The honey extraction process," explains Cesare Brusi, "becomes a large public laboratory, where everyone can see, try, and taste." This is precisely the philosophy behind Brusi's work: to spread the culture of bees and honey as widely as possible. "In the past," he continues, "only those in the know were initiated into the rituals and magic of the bee world. I remember my grandfather telling people not to come near him when they came to visit, not because bees were particularly dangerous, but because the secret had to remain within the family and be passed down from father to son. We are trying to do exactly the opposite."
The event focuses on the utmost protection of bees, as sentinels of the environment and primary pollinators, and as essential components of the chain of life. Bees and their hive products are a huge success every year, attracting both adults and children alike.
The most fascinating aspect is the honey extraction process, which can be witnessed during the event; the moment when the honey drips and is then poured into jars. Dozens of different types of honey are produced based on the flowers that are pollinated. There are also many hive products: they include beeswax, propolis, royal jelly, and pollen. Each of these has specific uses and benefits, both in the food, cosmetic, and health sectors.
