Is the Michelin Green Star Dead? Virtuous Restaurants Remain Alive But Need More Support

Today, 12 billion meals are eaten outside the home each year in France. That's 33 million per day. Behind every meal served, there's a hidden cost: that of a sector that generates 3% of national greenhouse gas emissions, 12% of food waste, and nearly a million tons of packaging each year (ADEME). Added to this is a supply that still overly favors processed products to the detriment of healthy, sustainable food, and sometimes undignified working conditions .
