Lactose, egg or gluten intolerant: how to (still) eat pancakes?

Lactose, egg or gluten intolerant: how to (still) eat pancakes?

Lactose intolerance is a problem digesting the sugar in milk and its derivatives. It results from a lactase deficiency. Lactose, not converted by lactase, is found in the intestine where it ferments. Symptoms (gas, bloating, diarrhea, nausea, vomiting, headaches, fatigue, etc.) most often appear between 30 minutes and 2 hours after ingesting the food containing lactose. If you suffer from this, simply replace the amount of milk with plant-based juices (soy, almond, rice, etc.).

Whether it's a gluten intolerance or a simple sensitivity, consuming this protein can quickly become problematic. The result: intestinal symptoms like bloating, abdominal pain, diarrhea, etc. Again, this shouldn't stop you from eating pancakes. There are many flours to replace wheat-based flours. Try rice flour combined with cornstarch (Maïzena®).
